Ingredients

  • 1 can refried beans
  • Wheat Melba Toast
  • ½ c. mild cheddar
  • 3 tomatoes
  • 2 jalapeños
  • ¾ of 1 white onion
  • 1 c. cilantro
  • 1 tsp. salt
  • 2 avocados
  • ½ lime

Directions

  1. Combine all ingredients for the pico de gallo (2 tomatoes, jalapeños, ½ white onion, ½ cup cilantro, ½ teaspoon salt) into a food processor and chop coarsely.

  2. Combine all the ingredients for the guacamole (avocados, 1 tomato, ¼ white onion, ½ cup cilantro, ½ teaspoon salt) except for the lime and pulse until smooth. Squeeze lime juice into the guacamole and mix to help keep fresh.

  3. Add a layer of refried beans to a transparent bowl. Layer mild cheddar for a second layer.
  4. Next, add the pico de gallo layer. Cover the third layer with fresh guacamole. Top with mild cheddar and cilantro as a garnish. Enjoy!
