Coconut and Spicy Caramelized Banana Pudding Minis

Classic Southern banana pudding gets a spicy (and easy!) makeover with the addition of toasted coconut and jalapeño. A perfect addition to your next social gathering!

Ingredients

  • 24 Classic Melba Toast
  • 2 c. vanilla pudding
  • ¾ c. toasted coconut
  • 2 bananas
  • 24 sugared jalapeño rings
  • ½ c. heavy whipping cream
  • 3 tbsp. powdered sugar
  • ½ c. sour cream
  • 1 tsp. vanilla extract
  • ½ tsp. jalapeño juice

Directions

  1. Place 24 Melba toasts on serving platter. Top each with spoonful of prepared vanilla pudding.
  2. Sprinkle each toast with toasted coconut and a slice of caramelized banana.
  3. To prepare the sweetened spicy cream, whip heavy cream until soft peaks form. Add sugar, sour cream, vanilla and jalapeño juice and whip until stiff peaks form.
  4. Top coconut with the sweetened spicy cream, and garnish with caramelized banana and sugared jalapeño, if desired.
