
The Chesapeake
Serves 6-8
3-4 medium, firm cucumbers, sliced
For the Crab Salad, Gently toss:
3 packages of Premium Lump Crab Meat, well drained
(each package is 3.53 oz, or 2.5 oz dry weight)
1 heaping teaspoon finely diced green onion or chives
2 teaspoons fresh dill roughly chopped
Lemon juice to sprinkle with
Optional:
2-3 Stalks Celery, finely diced
Place a cucumber slice on each American International Toast, and top with approx. 1 Tablespoon crab salad.
Sprinkle with a few drops lemon juice
To impress your guests, garnish with fresh lemon zest sprigs instead of the juice, and add a thin fancy drizzle of Dijon mustard. May also use Stone Claw crab meat.
Keep chilled until ready to eat
