Garden Chicken

Serves 4


2-3 large chicken breasts, fully cooked, and roughly chopped (or 3-5oz cans of premium-chunk chicken breast meat in water)
1 1/4 Tablespoon finely diced Bermuda Onion (Red Onion)
2-3 Tablespoons light Mayonnaise
1-2 stalks celery, finely diced
1/2 Tablespoon Garlic powder
Salt and white pepper to taste

Combine the above ingredients and spoon onto Melba Whole Grain Toasts
Garnish with Celery leaves

For extra flare, add a dash of curry powder or parmesan cheese

Keep chilled until ready to eat
